WHere is a simplified interpretation of a drink from a new menu. Designed as a large-volume pre-mixed that's bursting full of flavours of a Christmas time, making it ideal for a celebration. Reserve the remaining cordial you can use for morning drinks, puddings, or for more rounds of this cocktail.
Bikini Recipe
Serves 10 people
For the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Combine the listed components in a pan, bring to a gentle boil, agitating to dissolve. Then, remove from the stove and let it to cool entirely. Transfer to a sealable bottle, seal and refrigerate it in the fridge, where it will keep for about one month.
Preparing the Batch Mix: Pour all the liquid ingredients into a large bottle, let it rest for one hour, then strain preferably using cheesecloth, so it's perfectly clear.
When ready to serve: Pour 85ml of the premix into a cocktail shaker filled with ice, and stir gently for about 60 seconds to chill. Strain to a cold coupe glass or equivalent, top with the cranberries and finish with a light spray with the mandarin essence over the top.
